Ingredients list for the Low Carb Meatball Casserole
- 2 lbs (900g) ground turkey
- 1 cup shredded mozzarella
- 1/2 cup grated or shredded parmesan
- 1 egg
- 2 teaspoons onion powder
- 2 teaspoons fresh minced garlic
- 1/2 teaspoon Italian seasoning blend
- 1/2 teaspoon fresh cracked black pepper
- 1/2 teaspoon Cayenne pepper, optional
- 1/2 teaspoon crushed red chili pepper flakes, optional
- 1 cupMarinara sauce
- 1 cup shredded cheese of your choice for topping (Mozzarella, Provolone, Monterrey Jack, Cheddar…)
- Fresh basil or parsley, for topping

Directions
1.To prepare the meatballs casserole recipe: Preheat your oven to 400ºF (200ºC). Lightly spray a casserole dish with cooking spray.
2. Combine ground turkey, mozzarella, parmesan, egg, onion powder, garlic, Italian seasoning, Cayenne, crushed chili pepper flakes in a large salad bowl – except for the Marinara sauce, 1 cup cheese, and fresh basil that are set aside for the casserole. Use a small cookie scoop to form the meatballs all the same size and arrange the meatballs in the casserole dish.
3. Bake your meatballs casserole for 15 to 20 minutes or until fully cooked. Remove the meatballs casserole from the oven and drain the grease.
4. Top with the low carb Marinara sauce and shredded cheese and put the meatballs casserole back in the oven. Bake for an additional 5 to 10 minutes until the cheese has fully melted.
5. Serve the low carb meatballs casserole with a side salad or over zucchini noodles as pictured. Enjoy!

These turned out great! 2# of ground turkey is a lot. I was in a pinch for dinner and I only had a 12oz package and it made 15 meatballs. Definitely will make this again! Great flavor and super easy. Thank you!

They are a family favorite. Kids make them into meatball subs, i eat with a salad. Have made them at least 4 times.

I used 1lb Italian sausage and 1 lb turkey and halved the cayenne and red pepper flakes and they had amazing flavor. This is also a relatively quick meal to pull together for a week night. The only issue I had was the size of the meatballs. I used a “small cookie scoop” as directed and had a ton of them. They didn’t even fit crammed into a 11x13 pan. Clearly your scoop is larger. This also threw off the nutrition numbers bc I had no idea what a serving size should be. I’ll definitely make again, but larger :)

Did the recipe as stated, used a cast iron skillet to brown the meatballs first then added the marinara sauce and mozza cheese on top, put the skillet in oven at 400 degrees for 20-25 minutes. Delicious!

I made this tonight as per recipe apart from I cooked some onion and added it to the turkey before making the meatballs. I have made lots of meatballs in the past but have always found they lacked flavor. These were delicious and will definitely be added to my meal rotation. I served with stir fried garlic green beans and brussel sprouts and the whole family loved.
