How To Make Baguettes With Two Ingredient Dough

We love this dough because it is so easy to make. If the dough gets too wet, add a little more flour, and if it is too dry, you can add more Greek yogurt.

  • Dough: Mix together the self-rising flour and Greek yogurt. Turn the dough out onto a floured silicone mat.
  • Shape: Knead the dough a few times and then form two loaves. Place the loaves on the prepared baking sheet and cut slits on top of them.
  • Bake: Bake the baguettes on the middle rack with hot boiling water in a pan on the lower rack. The hot water creates steam in the oven and helps make the crust get crispy and crackly.

What is the secret to making dough? ›

Tip #1: Don't add too much extra flour. The amount of flour you need to bring the dough together into a smooth, elastic, and cohesive ball will depend on your kitchen environment. If the dough is tacky, or even a little sticky, don't worry. It will absorb moisture as it rests and rises.

What does yogurt do to dough? ›

Yogurt: Plain Greek yogurt holds the dough together and ensures a tender texture.

What three ingredients give bread flavor? ›

The volatile esters, aldehydes and secondary alcohols are the most significant flavor compounds produced during the dough fermentation by bakers yeast, are of particular interest in bread, because they contribute pleasant fruity and buttery flavor notes.

Which flour is best for baguettes? ›

Overall, the ideal flour for baguettes should have a moderate protein content, a fine texture, and should be of high quality. While traditional French type 55 flour is the ideal choice, a combination of all-purpose and bread flour can also work well in its place.

What kind of flour is best for baguettes? ›

This percentage straddles the line between most American all-purpose flours and bread flours, but King Arthur all-purpose flour (the one in the red bag), with its higher-than-normal 11.7% protein, actually makes an excellent baguette flour. If you can't find that one for some reason, use bread flour instead.

This sweet spot of dough texture is due to the ratio of flour to water. Excess water makes a batter, while too little water renders a dough rough, dry and unpliable. Generally speaking, a flour to water ratio of 2:1 achieves a dough of reasonable consistency. So if you have 500g of flour, use about 250 mL of water.

Does 2 ingredient dough freeze well? ›

This dough is quick to make, freezes well and makes a terrific tasting pizza. In a bowl, add the flour and yoghurt and mix until a dough is formed. Turn the dough out onto a floured surface and knead for 5 minutes. If the dough is too sticky to work with add more flour until it is manageable.
